Ingredients
• One large clove garlic cut in pieces
• ½ pound Cremini Mushrooms (remove stems)
• 1 tablespoon fresh thyme leaves
• 2 tablespoons olive oil
• One large onion chopped (3 cups)
• 1 cup lentils rinsed and drained
• ¾ cup whole wheat bread crumbs
• ½ Avocado (egg substitute)
• 1 Teaspoon Sea salt
• ½ cup Coconut flour
• 2 ounces vegan goat cheese
• Eight tomato slices (optional)
• Fresh basil leaves (optional)
Preparation
- Place garlic, mushrooms, and thyme in a food processor on pulse until they get finely chopped.
- Place 1 tablespoon of olive oil in skillet over medium heat
- Cook onion (while stirring) for about 15 minutes or until golden brown
- Stir in mushrooms and cook 2-3 minutes, or until the liquid dries out
- Remove from heat and let it cool
- Stir cooled mushroom mixture into lentils
- Combine with breadcrumbs, avocado, and salt
- Form 6 patties out of the mixture – ½ cup each
- Place the coconut flour on a plate & use it to coat the burgers
- Heat the remainder of the olive oil in a skillet over medium heat
- Cook burgers for about 3 minutes or until golden brown
- Flip the burgers & top them off with the veggie goat cheese
13. Cook for about 3 minutes or until golden brown or when cheese gets melted
14.You can serve it with tomatoes and basil
